  • 1 cup all-purpose flour

  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon cayenne pepper
  • 1 cup buttermilk
  • 1 large egg
  • 1 cup panko breadcrumbs
  • Vegetable oil (for frying)
  • 4 sandwich buns
  • Lettuce leaves
  • Tomato slices
  • Tartar sauce (optional)

Instructions

  1. Pat the cod fillets dry with paper towels.
  2. In a shallow dish, whisk together flour, salt, black pepper, paprika, garlic powder, onion powder, and cayenne pepper.
  3. In another dish, combine buttermilk and egg.
  4. Place panko breadcrumbs in a third dish.
  5. Bread the cod fillets by dredging in seasoned flour, dipping in the buttermilk mixture, and pressing into panko.
  6. Heat vegetable oil in a skillet to 350°F (175°C).
  7. Fry the cod fillets for about 3 to 4 minutes per side until golden brown.
  8. Drain on paper towels and lightly toast sandwich buns.
  9. Assemble sandwiches with tartar sauce, lettuce, tomato slices, and crispy cod.
