  • 1.5 pounds baby gold potatoes
  • 3 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1/3 cup grated parmesan cheese
  • Salt, black pepper, and fresh parsley for seasoning

Instructions

  1. Boil baby potatoes in salted water for 15–20 minutes until fork-tender. Drain and let dry briefly.
  2. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  3. Place boiled potatoes on the baking sheet and gently smash each one to about 1/2 inch thick using a flat-bottomed glass or potato masher.
  4. In a small saucepan, melt butter over low heat; stir in minced garlic and cook until fragrant (1–2 minutes).
  5. Brush smashed potatoes with garlic butter and drizzle lightly with olive oil; season with salt, pepper, and half of the parmesan cheese.
  6. Roast for 20–25 minutes until golden and crispy; add remaining parmesan during the last 5 minutes of roasting.
  7. Garnish with chopped fresh parsley before serving.
