  • Olive oil
  • Salt
  • 4 cloves of garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Wash and scrub potatoes; dry and pierce with a fork.
  3. Bake directly on the rack or on a baking sheet for about 45 minutes until tender.
  4. Let cool slightly, then cut in half and scoop out most flesh, leaving about 1/4 inch of potato.
  5. Mix olive oil, garlic, oregano, thyme, and salt in a bowl; brush over both sides of potato skins.
  6. Place on baking sheet; roast for an additional 20-25 minutes until golden brown and crispy.
  7. Garnish with fresh parsley and serve hot.
