  • 2 teaspoons minced garlic
  • 1 ½ teaspoons chopped rosemary
  • 2 pounds baby red potatoes (quartered)
  • 1 teaspoon kosher salt
  • ¼ teaspoon black pepper
  • 2 teaspoons chopped parsley

Instructions

  1. Preheat your oven to 400°F (204ºC).
  2. In a small saucepan, cook olive oil, minced garlic, and chopped rosemary over medium heat until the garlic is lightly golden.
  3. Strain the mixture through a fine-mesh strainer into a bowl; reserve the solids.
  4. Toss quartered baby red potatoes in the strained garlic oil along with salt and pepper.
  5. Spread the potatoes on a baking sheet and roast for 20 minutes. Flip them and roast for an additional 20 minutes until crisp and tender.
  6. Toss with reserved garlic bits and parsley before serving.
