  • ½ cup tahini
  • ½ cup granulated sugar
  • 1 cup light brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon sea salt
  • 2 cups dark chocolate chips
  • ¾ cup shelled pistachios

Instructions

  1. Preheat your oven to 350°F (175°C). If using raw pistachios, roast them on a baking sheet for about 8 minutes until lightly golden.
  2. In a saucepan, brown the butter over medium heat until amber in color, then let it cool.
  3. In a mixing bowl, combine browned butter, tahini, granulated sugar, brown sugar, eggs, and vanilla. Beat until light and fluffy.
  4. In another bowl, mix flour, baking soda, and sea salt. Gradually incorporate the dry ingredients into the wet mixture.
  5. Fold in dark chocolate chips and chopped pistachios. Optionally refrigerate dough overnight for enhanced flavor.
  6. Preheat oven to 375°F (190°C). Scoop dough onto lined baking sheets and bake for 9-11 minutes until golden brown around the edges.
