  • 1 cup unsalted butter
  • 1 ½ cups graham cracker crumbs
  • ¾ cup granulated sugar
  • 2 fresh vanilla beans
  • 16 oz cream cheese, softened
  • 1 cup full-fat sour cream
  • 3 large eggs

Instructions

  1. Preheat oven to 325°F (160°C). Allow all ingredients to reach room temperature.
  2. In a saucepan, melt butter over medium heat until golden brown and fragrant; set aside to cool.
  3. In a bowl, mix graham cracker crumbs and ¼ cup sugar. Stir in half the brown butter and press into the bottom of a springform pan. Bake for 10 minutes until golden.
  4. In another bowl, beat cream cheese until smooth. Gradually add sour cream and remaining sugar, scraping the sides as needed. Incorporate seeds from vanilla beans and add eggs one at a time.
  5. Mix in remaining brown butter until just combined; pour filling into the crust.
  6. Bake for 50-60 minutes until set but slightly jiggly in the center. Let cool completely before refrigerating for at least four hours or overnight.
