  • 1 cup dried chickpeas (soaked overnight)
  • 1/4 cup fresh parsley (chopped)
  • 1/4 cup fresh cilantro (chopped)
  • 3 garlic cloves (minced)
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 cup flour (or chickpea flour for extra flavor)
  • Vegetable oil (for frying)
  • 1 cup cooked quinoa or couscous
  • 1 cup sliced cucumbers
  • 1 cup cherry tomatoes (halved)
  • 1/4 cup tahini
  • 2 tbsp lemon juice
  • 1 clove garlic (minced)
  • Water to thin

Instructions

  1. Soak the dried chickpeas in water overnight. Drain and rinse before use.
  2. In a food processor, combine soaked chickpeas, garlic, parsley, cilantro, cumin, coriander, and salt. Pulse until slightly chunky.
  3. Mix in flour until the mixture holds together. Adjust with more flour if too wet.
  4. Heat vegetable oil in a pan to about 350°F. Shape the mixture into small balls or patties and fry until golden brown on all sides. Drain on paper towels.
  5. Cook quinoa or couscous according to package instructions; fluff and season with salt.
  6. Assemble your bowl: Start with grains at the base, add falafels, top with cucumbers and tomatoes, then drizzle with tahini sauce.
