  • 1 pound large fresh shrimp, peeled and deveined
  • 4 cups cauliflower florets
  • 3 tablespoons extra virgin olive oil
  • Juice of 1 lemon
  • 2 teaspoons garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Toss cauliflower florets with 2 tablespoons of olive oil, salt, pepper, and half of the garlic powder; spread evenly on one side of the baking sheet.
  3. Roast cauliflower for 20 minutes until golden brown.
  4. While the cauliflower roasts, combine shrimp with remaining olive oil, lemon juice, garlic powder, salt, and pepper in another bowl.
  5. After 20 minutes, add seasoned shrimp to the other side of the baking sheet.
  6. Roast for an additional 8-10 minutes until shrimp are pink and fully cooked.
  7. Serve warm, drizzled with more lemon juice if desired.
