  • 4 cups fresh broccoli florets (about 1 large head)
  • 2 tbsp extra virgin olive oil
  • 2 garlic cloves, minced
  • 3 tbsp freshly squeezed lemon juice
  • 1 tsp Dijon mustard
  • 1 tbsp capers, finely chopped
  • 1 tsp agar-agar powder
  • ¼ cup toasted pine nuts

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Toss broccoli florets with olive oil, salt, and pepper in a large bowl until well-coated. Spread evenly on a parchment-lined baking sheet.
  3. Roast broccoli for 20-25 minutes until tender and slightly crispy.
  4. While roasting, whisk together minced garlic, lemon juice, Dijon mustard, capers, and agar-agar in a mixing bowl until smooth. Gradually add olive oil while whisking to emulsify.
  5. Once cooled slightly, transfer roasted broccoli to a large serving bowl, pour over the dressing, and toss gently.
  6. Top with toasted pine nuts before serving.
