  • 1 red bell pepper (finely diced)
  • 1 orange or yellow bell pepper (finely diced)
  • 2 Persian cucumbers (sliced)
  • ½ small red onion (finely chopped)
  • ⅓ cup fresh parsley (chopped)
  • ½ cup kalamata olives
  • ½ cup feta cheese (crumbled)
  • Dressing: red wine vinegar
  • honey
  • dried oregano
  • garlic
  • salt
  • black pepper
  • extra virgin olive oil

Instructions

  1. In a mixing bowl, whisk together the dressing ingredients: red wine vinegar, honey, dried oregano, minced garlic, salt, black pepper. Slowly whisk in olive oil until well combined.
