  • 8 oz elbow macaroni
  • 6 large eggs
  • ½ cup mayonnaise
  • 1 tbsp yellow mustard
  • ½ cup finely chopped celery
  • ¼ cup chopped red onion

Instructions

  1. Cook elbow macaroni in salted boiling water until al dente. Drain and cool.
  2. Hard-boil the eggs by placing them in cold water, bringing to a boil, then covering and letting sit off heat for 10–12 minutes. Cool in an ice bath and peel.
  3. In a mixing bowl, whisk together mayonnaise, mustard, salt, pepper, sugar, and paprika until smooth.
  4. Chop boiled eggs and fold into the dressing along with celery and red onion.
  5. Gently mix in the cooled macaroni until well combined.
  6. Cover and refrigerate for at least one hour before serving.
