  • 3/4 cup granulated sugar
  • 1/2 cup brown sugar (packed)
  • 2 large eggs (room temperature)
  • 1/2 cup vegetable oil
  • 1 tablespoon vanilla extract
  • 3/4 cup granulated sugar (for coating)
  • 1 tablespoon cinnamon (for coating)
  • 1/8 teaspoon nutmeg (for coating)
  • 1/4 cup butter (melted)

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a non-stick muffin pan.
  2. In a medium bowl, whisk together all-purpose flour, cinnamon, nutmeg, cloves, baking soda, and salt.
  3. In a large bowl, mix pumpkin puree, granulated sugar, brown sugar until combined. Add eggs, vegetable oil, and vanilla extract; mix well.
  4. Gradually combine the dry ingredients into the wet mixture until smooth.
  5. Fill each muffin tin about 3/4 full and bake for 18-20 minutes or until a toothpick inserted comes out clean.
  6. Allow muffins to cool slightly in the pan before transferring to a wire rack.
