  • 4 boneless, skinless chicken breasts
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 1 cup cherry tomatoes, halved
  • 1 zucchini, diced
  • 1 bell pepper, diced
  • 1 red onion, chopped
  • 3 tablespoons balsamic vinegar
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat. Season the chicken breasts with salt, pepper, and oregano.
  2. Cook the chicken for 5–7 minutes on each side until golden brown and cooked through. Remove from skillet.
  3. In the same skillet, add garlic and vegetables; sauté for about 5 minutes until tender.
  4. Stir in orzo and chicken broth; bring to a boil. Reduce heat, cover, and simmer for 10–12 minutes until orzo is fully cooked.
  5. Return chicken to skillet; drizzle with balsamic vinegar and cook for an additional 2–3 minutes.
  6. Garnish with fresh basil before serving.
