This easy Chicken Noodle Soup recipe is the ultimate comfort food, perfect for those chilly nights or when you need a nourishing boost. Packed with tender chicken, flavorful herbs, and hearty noodles, this homemade soup is not only delicious but also incredibly easy to prepare.

  • 4 chicken thighs (skinless, bone-in or boneless)
  • 8 cups low-sodium chicken broth
  • 6 cups water
  • 2 tbsp olive oil
  • 1 medium onion (finely chopped)
  • 2 medium celery sticks (finely chopped)
  • 2 carrots (sliced into rings)
  • 6 oz rotini pasta
  • 3 tbsp fresh or frozen dill
  • 1 tsp Mrs. Dash (or your favorite salt-free seasoning)
  • 1 tbsp sea salt (or to taste)
  • 1 garlic clove (pressed)

Instructions

  1. In a large soup pot, bring water and chicken broth to a boil, adding sea salt. Once boiling, add chicken thighs and cook partially covered for 20 minutes.
  2. In a skillet over medium-high heat, sauté onion and celery in olive oil until softened. Transfer to the soup pot.
  3. Add pasta and carrots to the pot; cook for an additional 15 minutes at a low boil until pasta reaches desired softness.
  4. Remove chicken from the pot, shred it with forks, discard bones/fat, then return shredded chicken to the pot.
  5. Season with Mrs. Dash and press in garlic. Stir in dill before serving.
