  • 1 medium onion, chopped
  • 2 medium carrots, peeled and sliced
  • 2 sticks celery, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups water
  • 1.5 pounds uncooked chicken breasts (boneless skinless)
  • 1/2 teaspoon Italian seasoning
  • 2 cups uncooked egg noodles
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large soup pot, heat olive oil and butter over medium-high heat. Sauté onion, carrots, and celery for 5-7 minutes until softened.
  2. Add minced garlic and cook for an additional 30 seconds.
  3. Pour in chicken broth, water, chicken breasts, and Italian seasoning. Bring to a boil.
  4. Reduce heat to low, cover slightly ajar, and simmer for about 15 minutes.
  5. Stir in egg noodles and cook uncovered for another 8 minutes until al dente.
  6. Remove cooked chicken from the pot, shred it into bite-sized pieces, then return it to the soup.
  7. Season with salt and pepper as desired and garnish with fresh parsley before serving.
