  • 1 can chickpeas (15 oz), rinsed and drained
  • 1 cup cherry tomatoes, halved
  • 4 Persian cucumbers, diced
  • ¼ cup red onion, diced
  • ¼ cup fresh parsley, chopped
  • 2 Tbsp fresh dill, chopped
  • ½ cup crumbled feta cheese
  • 1 Tbsp extra virgin olive oil
  • 2 Tbsp white wine vinegar (or apple cider vinegar)
  • 1 lemon (juice of)
  • ½ tsp garlic powder
  • ½ tsp salt
  • black pepper

Instructions

  1. Rinse and drain chickpeas; dice cucumbers and chop tomatoes.
  2. In a mixing bowl, combine chickpeas, cucumbers, tomatoes, red onion, parsley, dill, and feta.
  3. In a separate bowl, whisk together dressing ingredients: olive oil, vinegar, lemon juice, garlic powder, salt, and pepper.
  4. Toss the salad with the dressing until well combined.
