  • 1 can (15 oz) black beans
  • 1 can (15.25 oz) corn (undrained)
  • 1 can (10 oz) Rotel tomatoes (undrained)
  • 1 package ranch dressing mix
  • 1 tsp cumin
  • 1 Tbsp chili powder
  • 1 tsp onion powder
  • 1 package (8 oz) light cream cheese
  • 2 chicken breasts

Instructions

  1. Drain and rinse black beans. Place chicken breasts at the bottom of the crock pot.
  2. Add corn, Rotel tomatoes, and black beans on top of the chicken.
  3. Sprinkle ranch dressing mix, cumin, chili powder, and onion powder over the mixture and stir gently.
  4. Place cream cheese on top of the mixture and cover. Cook on low for 6 to 8 hours.
  5. After cooking, shred chicken and return to the chili mixture, stirring well before serving.
