  • 1 (14-16 pound) whole turkey
  • 1 cup unsalted butter (softened)
  • 1 tablespoon fresh sage (chopped)
  • 1 tablespoon fresh thyme (chopped)
  • 1 tablespoon fresh rosemary (chopped)
  • 4 cloves garlic (minced)
  • Salt & pepper (to taste)
  • 1 lemon (halved)

Instructions

  1. Allow the turkey to sit at room temperature for an hour before roasting.
  2. Combine softened butter with herbs and garlic in a mixing bowl.
  3. Preheat the oven to 450°F; adjust the rack to the bottom third.
  4. Prepare the turkey by removing giblets, patting dry, seasoning inside and out with salt and pepper, then stuffing with lemon halves and herbs.
  5. Rub the herb butter all over the turkey skin, tucking wings under.
  6. Place turkey breast side up in a roasting pan and reduce oven heat to 350°F.
  7. Roast for approximately 3 hours or until the internal temperature reaches 165°F in the thickest part of the thigh.
  8. Let rest for 20 minutes before carving.
