  • 3 chicken breasts
  • 3 garlic cloves
  • 1 tbsp minced ginger
  • 1 red bell pepper
  • 3 heaping tbsp Thai red curry paste
  • 1 can coconut milk (400ml)
  • 3 bok choy
  • Juice of 1 lime
  • Salt and pepper to taste

Instructions

  1. Prepare rice according to package instructions.
  2. Slice chicken breasts into thin cutlets; season with salt, pepper, and chili powder.
  3. In a skillet, heat coconut oil over medium heat; sauté chicken until golden brown and cooked through. Remove from pan.
  4. Sauté minced garlic, ginger, and sliced bell pepper in the same skillet until softened.
  5. Stir in red curry paste and brown sugar; cook for 1-2 minutes before adding coconut milk.
  6. Simmer mixture; add chopped bok choy and cook until tender.
  7. Season with lime juice, additional salt, and red pepper flakes if desired.
  8. Serve over rice with fresh cilantro on top.
