  • 2 cups shelled edamame (fresh or frozen)
  • 1 cup shredded carrot
  • 1 cup finely shredded cabbage
  • 1 cup diced cucumber
  • 2 green onions, thinly sliced
  • 1/4 cup chopped fresh cilantro
  • For the dressing: low-sodium soy sauce
  • sesame oil
  • extra virgin olive oil
  • rice vinegar
  • maple syrup (or honey)
  • grated fresh ginger
  • sesame seeds

Instructions

  1. If using frozen edamame, defrost and cook according to package instructions (3-5 minutes in boiling water). Drain and cool.
  2. In a large mixing bowl, combine the cooked edamame, carrot, cabbage, cucumber, green onions, and cilantro.
  3. In a separate bowl, whisk together soy sauce, sesame oil, olive oil, rice vinegar, maple syrup/honey, and ginger to create the dressing.
  4. Pour the dressing over the salad mixture and toss well to combine. Let it sit for 10-15 minutes before serving to meld flavors.
