  • 1 1/2 cups graham cracker crumbs
  • 3 tablespoons granulated sugar
  • 4 tablespoons unsalted butter (melted)
  • 1/8 teaspoon salt
  • 2 (8 oz) cream cheese (softened)
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 large egg yolk
  • 2 tablespoons all-purpose flour
  • 3/4 cup eggnog
  • 1 teaspoon pure vanilla extract
  • 1/2 teaspoon nutmeg (plus more for dusting (optional))
  • 1 tablespoon bourbon (optional)
  • Graham cracker crumbs and/or crystallized ginger (optional)

Instructions

  1. Preheat oven to 350°F. Line a 9 x 9 inch baking pan with parchment paper and lightly spray with nonstick cooking spray.
  2. In a medium bowl, mix graham cracker crumbs, melted butter, sugar, and salt until well combined. Press firmly into the bottom of the pan and bake for 10 minutes.
  3. In a large bowl, beat softened cream cheese until fluffy. Gradually add sugar, then mix in eggs, egg yolk, eggnog, and vanilla until smooth. Stir in flour and nutmeg until fully incorporated.
  4. Pour the cheesecake filling over the crust and bake for about 30–45 minutes until set with a slight jiggle in the center.
  5. Cool on a wire rack for one hour before refrigerating for at least three hours or overnight before serving.
