  • 2 tablespoons vegetable oil
  • 2 tablespoons all-purpose flour
  • 3 tablespoons chili powder
  • 1 teaspoon garlic powder
  • 1 pound ground beef (90/10)
  • 1 small yellow onion, diced
  • 3 cloves garlic, minced
  • 12 corn tortillas
  • 1½ cups pepper jack cheese, shredded
  • 1½ cups medium cheddar cheese, shredded

Instructions

  1. Preheat the oven to 350°F.
  2. In a medium saucepan, heat vegetable oil and flour over medium heat until smooth. Stir in spices and tomato paste; gradually add chicken stock and simmer until thickened.
  3. In a skillet, brown ground beef with onion and garlic until cooked through. Mix in beans and half of the enchilada sauce.
  4. Layer half of the tortillas in a greased baking dish, followed by half of the beef mixture and cheeses. Repeat layers.
  5. Cover with foil and bake for 20 minutes. Remove foil and bake for an additional 15 minutes until cheese is bubbly.
