  • 1 cup quinoa
  • 1 medium butternut squash
  • 2 cups kale
  • 1 medium apple
  • 1/2 cup dried cranberries
  • 1/4 cup pumpkin seeds
  • 1/4 cup tahini
  • 2 tablespoons maple syrup
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons olive oil

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Rinse quinoa under cold water. In a medium pot, combine quinoa and water (2 cups). Bring to a boil, reduce heat, cover, and simmer for about 15 minutes until water is absorbed.
  3. Peel and cube butternut squash. Spread on a baking sheet lined with parchment paper. Drizzle with olive oil and sprinkle with salt. Roast for 25-30 minutes until tender.
  4. In a mixing bowl, combine cooked quinoa, roasted squash, chopped kale, diced apple, dried cranberries, pumpkin seeds, tahini, maple syrup, apple cider vinegar, and olive oil. Toss gently to mix.
