Chipotle Tahini Bowls are a vibrant and nutritious meal perfect for any occasion. This dish combines smoky chipotle flavors with creamy tahini, featuring a base of protein-packed quinoa topped with colorful roasted vegetables and tender chicken. Drizzled with a rich tahini sauce, this bowl is both satisfying and customizable, making it ideal for weeknight dinners or impressing guests.

  • 1 cup quinoa
  • 2 cups water or vegetable broth
  • 1 bell pepper, chopped
  • 1 medium zucchini, chopped
  • 1 medium sweet potato, cubed
  • 2 chicken breasts (about 8 oz each)
  • 3 tbsp tahini
  • 1 tsp chipotle powder (adjust to taste)
  • 2 tbsp lemon juice
  • 1 garlic clove, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water. In a saucepan, combine quinoa and water/broth; bring to a boil. Reduce heat, cover, and simmer for 15 minutes until fluffy.
  2. Preheat oven to 425°F (220°C). Toss chopped vegetables in olive oil, salt, and pepper; roast for 20-25 minutes until golden.
  3. Season chicken breasts with salt, pepper, and chipotle powder. Grill or bake at 400°F (200°C) for about 20-25 minutes until cooked through. Slice after resting.
  4. Whisk together tahini, minced garlic, lemon juice, olive oil, and enough water to reach desired consistency for the sauce.
  5. In serving bowls, layer quinoa at the bottom followed by roasted veggies and sliced chicken. Drizzle with tahini sauce.
