  • 8 oz medium shrimp (deveined)
  • 1 cup bell peppers (mixed red and green)
  • 1 medium onion
  • 4 cloves garlic
  • 1 cup long-grain rice
  • 3 cups low-sodium chicken broth
  • 1 can (14.5 oz) diced tomatoes with green chilies
  • 2 tbsp Cajun seasoning
  • 2 tbsp olive oil

Instructions

  1. Dice the chicken and shrimp into bite-sized pieces. Finely chop the bell peppers, onion, and garlic.
  2. In a large pot over medium heat, add olive oil. Sauté the onions, bell peppers, and garlic until soft (about 5 minutes).
  3. Add diced chicken and Cajun seasoning; cook until the chicken is browned (approximately 7 minutes).
  4. Stir in rice, diced tomatoes (with juices), and chicken broth. Bring to a gentle simmer.
  5. Cover and let cook on low heat for about 20 minutes until rice is tender.
  6. Add shrimp, cover again, and cook for an additional 5 minutes until shrimp are pink.
