Ingredients

Scale
  • 4 boneless, skinless chicken breasts (1 lb)
  • 4 cups green cabbage, shredded (1 small head)
  • 1 cup shredded carrots
  • 1/2 cup fresh cilantro, chopped
  • 2 tbsp sesame oil
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp honey or maple syrup
  • 3 garlic cloves, minced
  • 1 tbsp cornstarch (or agar-agar)

Instructions

  1. 1. Cook the Chicken: Heat a skillet over medium-high heat with a splash of oil. Season chicken breasts with salt and pepper and cook until golden brown, about six minutes per side.
  2. 2. Prepare the Veggies: Shred cabbage into thin strips. In a large bowl, toss cabbage with shredded carrots and chopped cilantro.
  3. 3. Whip Up The Dressing: In a separate bowl, combine soy sauce, honey or maple syrup, minced garlic, and sesame oil. If using cornstarch for thickening, mix it in as well.
  4. 4. Slice The Chicken: Once cooked through (165°F internal temperature), let the chicken rest before slicing into bite-sized pieces.
  5. 5. Assemble The Salad: Add sliced chicken to the veggie bowl and pour dressing over everything. Toss gently to coat all components evenly.
  6. 6. Serve & Enjoy: Transfer to plates or serve family-style from the bowl. Drizzle any remaining dressing on top if desired.
