  • 1 egg (or flax egg)

Instructions

  1. Preheat your oven to 350°F and grease a mini muffin tin.
  2. In a mixing bowl, combine almond meal, sugar, baking powder, salt, and spices.
  3. In another bowl, whisk together pumpkin puree and egg.
  4. Mix the wet ingredients into the dry ingredients until just combined; fold in chocolate chips if using.
  5. Fill muffin cups about three-quarters full and bake for 10 minutes.
  6. Allow to cool slightly before removing from the tin.
