Ingredients

  • Jumbo pasta shells
  • Ricotta cheese
  • Mozzarella cheese
  • Provolone cheese (or fontina)
  • Parmesan cheese
  • Marinara sauce (homemade or store-bought)
  • Garlic
  • Egg
  • Fresh parsley

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large sauté pan, heat olive oil over medium heat. Sauté diced onions until softened, then add minced garlic and crushed red pepper. Stir in crushed tomatoes and tomato sauce; season with salt and pepper. Simmer for 20 minutes.
  3. In a mixing bowl, combine ricotta, 1 cup mozzarella, provolone, parmesan, egg, garlic, parsley, salt, and pepper. Transfer the mixture to a gallon-size baggie for easy filling.
  4. Spray a 9×13 baking dish with non-stick spray and pour 1 cup of marinara sauce at the bottom. Fill each pasta shell with the cheese mixture and place them in the dish. Top with remaining sauce and mozzarella.
  5. Pour water around the shells and cover tightly with foil. Bake for about 1 hour; remove foil and broil for 1-2 minutes until golden brown.
  6. Let it rest before serving, garnished with fresh parsley.
