  • 2 cups powdered sugar (sifted)
  • 2 tsp vanilla extract
  • 1/4 tsp salt
  • 2 Tbsp heavy cream
  • 1/4 tsp red and blue food coloring
  • 125 g almond flour (1 cup)
  • 150 g powdered sugar (1 1/4 cup)
  • 100 g egg whites (room temperature, from 3 large eggs)
  • 100 g white granulated sugar (1/2 cup)

Instructions

  1. Prepare your baking sheets by lining them with parchment paper.
  2. In a bowl, sift together almond flour and powdered sugar.
  3. In a separate bowl, whip egg whites until foamy; gradually add granulated sugar and whip until stiff peaks form.
  4. Gently fold in dry ingredients until combined; then divide batter into three bowls and color one red, one blue, and leave one plain.
  5. Pipe circles onto prepared sheets; let rest for about 30 minutes to form a skin.
  6. Bake at 300°F (150°C) for 15-20 minutes or until set.
  7. While cooling, prepare buttercream by mixing all filling ingredients until smooth.
  8. Assemble macarons by piping buttercream between two shells.
