  • 3 large yellow onions
  • 4 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 3 garlic cloves
  • 6 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • Fresh thyme leaves
  • Salt and pepper
  • Baguette slices for serving
  • 1 1/2 cups shredded Gruyère or Swiss cheese

Instructions

  1. Sear the short ribs in olive oil until browned on all sides. Remove and set aside.
  2. In the same pot, melt butter and caramelize sliced onions over medium heat for about 25–30 minutes.
  3. Add minced garlic, then pour in beef broth along with Worcestershire sauce, bay leaf, thyme, salt, and pepper.
  4. Return short ribs to the pot, bring to a boil, then reduce heat and simmer for 2–2.5 hours until tender.
  5. Toast baguette slices topped with cheese under the broiler until bubbly.
  6. Serve soup topped with cheese toast.
