  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 2 large eggs
  • 3/4 cup whole milk
  • 2 teaspoons vanilla extract
  • 2 cups peeled and diced fresh peaches
  • Vegetable or canola oil (for frying)
  • For the glaze: 1 cup powdered sugar, 2 tablespoons milk, and 1/2 teaspoon vanilla extract

Instructions

  1. Peel and dice fresh peaches; set aside.
  2. In a large bowl, whisk flour, sugar, baking powder, and salt.
  3. In another bowl, beat eggs and mix in milk and vanilla. Combine wet and dry mixtures gently; fold in peaches.
  4. Heat oil in a deep frying pan to 350°F.
  5. Drop spoonfuls of batter into the hot oil; fry for 2–3 minutes per side until golden brown.
  6. Drain on paper towels and drizzle with glaze made from mixing powdered sugar, milk, and vanilla.
