  • For the Frosting:
  • 1/2 cup softened butter
  • 4 cups powdered sugar
  • A dash of salt
  • 1 Tbsp lemon zest
  • 2 Tbsp fresh lemon juice

Instructions

  1. Preheat the oven to 350°F (175°C). Prepare your tools: electric mixer, mixing bowls, measuring cups and spoons, cookie sheets lined with silicone mats or cooking spray.
  2. In a large mixing bowl, cream together softened butter and granulated sugar using an electric mixer on medium-high speed until fluffy.
  3. Beat in eggs, fresh lemon juice, and lemon zest until well combined.
  4. Gradually mix in all-purpose flour, baking powder, and salt until fully incorporated.
  5. Roll tablespoon-sized balls of dough and place them on prepared cookie sheets; flatten slightly with a glass dipped in sugar.
  6. Bake for 9-10 minutes until edges are barely golden brown. Let cool on the pan for 3-4 minutes before transferring to cooling racks.
