  • 40 g icing sugar
  • 1 large egg
  • 225 g plain flour
  • 3.5 cups milk
  • 57 g butter (for custard)
  • 3 teaspoons vanilla extract
  • 100 g granulated sugar
  • ½ cup cornflour
  • 2 large eggs
  • 3 egg yolks
  • 3 cups mixed berries

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. In a stand mixer, beat together softened butter and icing sugar until smooth. Add the egg and gradually mix in flour until a dough forms.
  3. Shape the dough into a disk, chill for at least two hours, then roll out to fit a tart pan.
  4. Bake the tart shell until golden brown.
  5. For the filling, heat milk, butter, sugar, and vanilla in a saucepan. Whisk cornflour with eggs in another bowl; combine with the hot milk mixture.
  6. Cook until thickened, pour into the cooled tart shell, and refrigerate for at least three hours before serving.
