  • 8 sheets of rice paper
  • Handful of mint leaves
  • Handful of strawberries
  • 2 kiwis
  • 1 apple
  • 1 mango
  • 1/2 block of cream cheese
  • 1 cup heavy cream (125g), softened
  • 1/2 lime, juiced
  • 12 tbsp honey

Instructions

  1. Chop all fruits into thin strips.
  2. Briefly dip each rice paper sheet in water to soften.
  3. Fill each softened rice paper with fruit and mint leaves.
  4. Roll tightly, folding the ends to seal.
  5. To make the dip, whip heavy cream until nearly stiff; gently mix in cream cheese, lime juice, and honey until combined.
  6. Serve rolls with the creamy dip.
