  • 4 boneless skinless salmon fillets
  • 1/4 cup plain flour
  • 2 tsp garlic powder
  • 1/2 tsp black pepper
  • 6 tbsp unsalted butter (divided)
  • 2 cloves garlic (finely diced)
  • 1/2 cup vegetable stock
  • Fresh parsley and lemon wedges for garnish

Instructions

  1. Coat the salmon fillets in a mixture of flour, garlic powder, salt, and pepper.
  2. Heat olive oil in a non-stick pan over medium-high heat and fry the fillets for about 3 minutes on one side until golden brown. Flip and cook for another 2 minutes.
  3. Add 1 tablespoon of butter to the pan and baste the salmon until nearly cooked through; remove from the pan.
  4. In the same pan, sauté diced garlic and then add vegetable stock, scraping up any bits from the bottom. Stir in remaining butter until combined.
  5. Return the salmon to the pan to warm through in the sauce before serving with fresh parsley and lemon juice.
