  • 4 boneless, skinless chicken breasts
  • 1.5 pounds baby potatoes, halved
  • 1 cup chicken broth
  • 1/2 cup grated parmesan cheese
  • 4 cloves garlic, minced
  • 1 tablespoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil

Instructions

  1. Wash and halve the baby potatoes. Mince the garlic.
  2. Rub olive oil over the chicken breasts and season with Italian seasoning, salt, black pepper, and optional red pepper flakes.
  3. Layer halved potatoes in the bottom of a slow cooker; place seasoned chicken on top.
  4. Pour chicken broth over layers and sprinkle minced garlic and parmesan cheese on top.
  5. Cover and cook on low for 6–7 hours or high for 3–4 hours until chicken reaches an internal temperature of 165°F (75°C) and potatoes are fork-tender.
  6. Serve hot, garnished with fresh parsley if desired.
