  • lbs sirloin steak (cut into bite-sized cubes)
  • lbs baby potatoes (halved or quartered)
  • 4 tablespoons olive oil
  • 4 tablespoons butter
  • 56 cloves garlic (minced)
  • 1 teaspoon paprika
  • 1 teaspoon dried Italian herbs
  • Salt and black pepper to taste
  • Fresh parsley (chopped for garnish)

Instructions

  1. Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the halved baby potatoes, season with salt, pepper, and paprika, and cook until golden brown and fork-tender (about 15 minutes). Remove from skillet.
  2. In the same skillet, add remaining olive oil and 2 tablespoons of butter. Season sirloin steak cubes with salt, pepper, and Italian herbs. Sear in a single layer for about 2–3 minutes on each side until browned but not overcooked.
  3. Reduce heat to medium-low, add remaining butter and minced garlic to the skillet. Sauté until fragrant (about 1 minute). Return cooked potatoes to the pan and gently toss everything together.
  4. Cook for an additional 1–2 minutes just to heat through. Garnish with fresh chopped parsley before serving hot.
