  • 8 ounces egg noodles or rice noodles

  2. Add sliced chicken breast and season with salt and pepper. Sauté until cooked through (about 5–7 minutes).
  3. Stir in sliced onion, minced garlic, and grated ginger; cook until fragrant (2–3 minutes).
  4. Pour in chicken broth and water; bring to a rolling boil.
  5. Add julienned carrots and sliced bell pepper; cook for about 5 minutes until softened.
  6. Stir in egg noodles and cook according to package instructions (5–7 minutes).
  7. About 2 minutes before noodles are done, add bok choy or spinach; stir to wilt.
  8. Taste the broth and adjust seasoning if needed.
