  • 1/2 cup unsalted butter (softened)
  • 4 ounces cream cheese (brick style)
  • 1 1/22 1/2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 tablespoon whipping cream (if needed)

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Mix dry ingredients (flour, spices, baking soda, salt) in one bowl.
  3. In another bowl, cream together softened butter and sugars until fluffy. Add molasses, vanilla extract, and egg; mix well.
  4. Gradually combine wet and dry ingredients; fold in rolled oats.
  5. Drop tablespoon-sized dough onto prepared sheets and bake for about 9 minutes.
  6. Allow cookies to cool before preparing the filling: beat together softened butter and cream cheese; mix in powdered sugar until smooth.
  7. Assemble by spreading or piping the cream filling between two cooled cookies.
