  • 1.2 liters chicken broth
  • 30g unsalted butter or olive oil
  • 40g finely chopped shallots
  • 2 tsp minced garlic
  • 200g Arborio rice
  • 120ml dry white wine
  • 450g large raw shrimp, peeled & deveined
  • 100g finely grated Parmesan cheese
  • Black pepper, to taste
  • Chopped parsley or chives, for garnish

Instructions

  1. Warm chicken broth in a pot over low heat.
  2. In a wide pan, melt butter or heat olive oil on medium. Sauté shallots until translucent (about 4 minutes), then add garlic and cook for an additional minute.
  3. Stir in Arborio rice and toast for 2-3 minutes until slightly translucent.
  4. Deglaze with dry white wine, allowing it to reduce completely while stirring.
  5. Gradually add warm broth (½ cup at a time), stirring continuously for about 25-35 minutes until rice is creamy and al dente.
  6. Season shrimp with salt and pepper; cook in a separate pan until pink and opaque (about 2 minutes per side).
  7. Stir Parmesan into the risotto until well combined; let it rest off heat for 5 minutes before serving.
  8. Top with shrimp, extra cheese, and fresh herbs before serving.
