  • 1/3 cup lemon juice
  • 4 garlic cloves (minced)
  • 1 tablespoon dried oregano
  • 8 bone-in skin-on chicken thighs
  • 56 medium Yukon Gold potatoes (peeled and cut into 1-inch pieces)
  • Kosher salt and freshly ground black pepper

Instructions

  1. Preheat your oven to 425ºF.
  2. In a bowl, whisk olive oil, lemon juice, garlic, oregano, salt, and pepper until combined.
  3. Marinate chicken thighs with half the marinade for at least 30 minutes.
  4. In a baking dish, toss potatoes with remaining marinade and place chicken on top.

  6. Bake for 55-60 minutes until chicken is cooked through (165ºF) and potatoes are tender.
