  • 12 large tomatillos (about 2 pounds)
  • 1/2 onion
  • 1 jalapeno pepper
  • 1 garlic clove
  • 1 teaspoon kosher salt
  • Optional: 2-inch bunch of cilantro (about 2 tablespoons chopped)

Instructions

  1. Preheat oven to 425°F.
  2. Remove husks from tomatillos and wash them.
  3. Cut the onion into quarters and the jalapeno into quarters.
  4. Place tomatillos, onion, and jalapeno on a cookie sheet and roast for 20-30 minutes until soft.
  5. Allow to cool slightly, then transfer to a blender. Add garlic and salt; blend until smooth. If desired, add chopped cilantro and blend again.
  6. Taste and adjust seasoning if necessary.
