Grilled Peach and Burrata Salad is a delightful summer dish that harmoniously blends the sweetness of grilled peaches with the creamy richness of burrata cheese. This vibrant salad, featuring fresh greens and a zesty herbed vinaigrette, is quick to prepare and perfect for picnics, barbecues, or light dinners.

  • 4 ripe peaches or nectarines
  • 1 ball of burrata cheese
  • ¼ cup olive oil (divided)
  • 1 Tbsp red wine vinegar
  • 1 tsp honey
  • 1 Tbsp fresh basil, chopped
  • 68 cups mixed greens
  • ¼ cup chopped pistachios
  • Salt and pepper to taste

Instructions

  1. Preheat your grill to medium heat. Cut peaches in half, remove pits, and brush with olive oil. Season with salt and pepper.
  2. Grill peaches for 2–3 minutes on each side until marked. Remove from grill and drizzle with honey.
  3. In a bowl, mix remaining olive oil, red wine vinegar, honey, chopped herbs, salt, and pepper to create the vinaigrette.
  4. In a large bowl, layer mixed greens, sliced grilled peaches, torn burrata cheese, and pistachios. Drizzle with vinaigrette before serving.
