  • 4 ripe peaches or nectarines
  • 1 ball burrata cheese
  • 68 cups mixed greens
  • ¼ cup olive oil
  • 1 Tbsp red wine vinegar
  • 1 tsp honey
  • Fresh herbs (basil, dill, oregano)
  • ¼ cup pistachios (or walnuts/almonds)
  • ⅓ cup chopped tomatoes

Instructions

  1. Preheat the grill to medium heat. Slice peaches in half and remove the pit. Brush with olive oil and season with salt and pepper.
  2. Grill peach halves for 2–3 minutes on each side until grill marks appear. Drizzle with honey after grilling.
  3. Prepare the herbed lemon vinaigrette by whisking olive oil, vinegar, honey, lemon zest, lemon juice, minced garlic, and chopped herbs in a bowl.
