  • 2 medium zucchini, sliced
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 1 pound lean ground beef
  • 2 tsp Italian seasoning
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 can (28 ounces) diced tomatoes, drained
  • 2 cups shredded mozzarella cheese

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Slice the zucchini into 1/2" rounds and place them in a sieve. Sprinkle with salt and let sit for 15 minutes to draw out moisture. Rinse and pat dry.
  3. Heat olive oil in a skillet over medium-high heat. Sauté onions until softened, then add garlic and ground beef. Cook until browned.
  4. Stir in drained tomatoes, Italian seasoning, salt, and pepper; mix well.
  5. In an 8×8 baking dish, layer half of the beef mixture, followed by zucchini slices and half of the cheese. Repeat layers.
  6. Bake for 20 to 25 minutes until cheese is bubbly and golden. Let rest before serving.
