  • 1 small onion, diced
  • 3 bell peppers (red, yellow, or green), sliced
  • 3 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • ½ tsp chili powder (optional)
  • ½ tsp salt (or to taste)
  • ½ tsp black pepper
  • ¼ cup low-sodium chicken broth
  • 1 tbsp tomato paste
  • 1 tbsp soy sauce or coconut aminos
  • Juice of ½ lime (optional)
  • Fresh cilantro or parsley for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add onions and sauté until soft (about 3 minutes). Stir in garlic for another 30 seconds.
  2. Add ground turkey to the skillet, breaking it up with a wooden spoon. Cook until no longer pink (5-6 minutes).
  3. Sprinkle spices over the turkey and mix well.
  4. Stir in sliced bell peppers and cook for an additional 3-4 minutes until slightly softened.
  5. Add chicken broth, tomato paste, and soy sauce; simmer for 2-3 minutes.
  6. Squeeze fresh lime juice before serving and garnish with cilantro or parsley.
