  • 1 cup all-purpose flour
  • 2 ribs celery
  • 1 large yellow onion
  • 1 large green bell pepper
  • 2 teaspoons minced garlic
  • 10 cups beef broth
  • 14 ounces andouille sausage
  • 14.5 ounces stewed tomatoes
  • 6 ounces tomato sauce
  • 3 pounds shrimp (peeled and deveined)
  • Cooked white rice

Instructions

  1. In a large pot over medium-low heat, melt the butter. Whisk in flour to create a roux, cooking until deep brown (30-40 minutes).
  2. Remove from heat; let cool slightly.
  3. Chop celery, onion, bell pepper, and garlic in a food processor until finely chopped.
  4. Stir vegetable mixture into the roux; cook until tender (8-12 minutes). Gradually whisk in beef broth; bring to a boil.
  5. Add sausage, tomatoes, tomato sauce, hot sauce, sugar, Cajun seasoning, thyme, and bay leaves. Simmer uncovered for 45 minutes.
  6. Stir in shrimp and Worcestershire sauce; cook an additional 45-60 minutes.
  7. Serve over cooked rice.
