  • 1/2 cup soy sauce
  • 1/2 cup pineapple juice
  • 1/4 cup brown sugar
  • 1 (13.5-oz) can coconut milk
  • 2 cups jasmine rice
  • Assorted vegetables (bell peppers and red onion)
  • Fresh cilantro and green onions for garnish

Instructions

  1. Marinate chicken thighs in a mixture of soy sauce, pineapple juice, brown sugar, garlic, ginger, sesame oil, and rice vinegar for at least 30 minutes.
  2. Prepare the coconut rice by combining rinsed jasmine rice with coconut milk and water in a pot; bring to a boil, reduce heat, cover, and simmer until fluffy.
  3. In a large skillet, sauté bell peppers and onion until tender. Remove from pan.
  4. Cook marinated chicken until golden brown; add vegetables and reserved marinade glaze to the skillet.
  5. Serve over coconut rice and garnish with cilantro and green onions.
