  • 1/2 cucumber (for salsa)
  • 1/4 red onion
  • 1/4 cup kalamata olives
  • Coconut yogurt (for tzatziki)
  • Fresh herbs: dill and parsley
  • Lemon juice
  • Olive oil

Instructions

  1. Prepare the Greek salsa by mixing diced cucumber, red onion, sliced olives, lemon juice, dill, parsley, salt, and pepper in a bowl. Chill in the fridge.
  2. Combine coconut yogurt with diced cucumber, dill, garlic powder, salt, and lemon juice to make the tzatziki sauce. Refrigerate until ready to serve.
  3. In a non-stick skillet, heat olive oil over medium heat. Cook ground chicken until fully cooked. Season with garlic powder, onion powder, oregano, dill, parsley, salt, pepper (if using), and lemon juice.
