  • ¾ cup (90g) whole wheat flour or gluten-free flour
  • 1 ½ tsp baking powder
  • 1 ½ tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • ¼ tsp salt
  • 2 tbsp (28g) coconut oil or unsalted butter, melted and cooled slightly
  • 1 large egg, room temperature
  • 1 tsp vanilla extract
  • ½ cup (120mL) pure maple syrup
  • 1 cup (90g) freshly grated zucchini, patted dry

Instructions

  1. In a medium bowl, whisk together oats, flour, baking powder, cinnamon, nutmeg, and salt.
  2. In another bowl, combine melted coconut oil or butter, egg, and vanilla until mixed well. Stir in maple syrup.
  3. Mix the dry ingredients into the wet ingredients until just combined. Fold in the grated zucchini.
  4. Chill the dough for 30 minutes.
  5. Preheat oven to 325°F (163°C) and line a baking sheet with parchment paper.
  6. Scoop rounded tablespoons of dough onto the prepared sheet and flatten slightly.
  7. Bake for 11-14 minutes until golden around the edges; cool before serving.
